Potato Planks

  • 1 pound russet potatoes
  • 2 Tablespoons olive oil
  • Salt and black pepper to taste
  • 2 Tablespoon minced fresh parsley

Step 1

Preheat grill to medium-high.

Slice potatoes lengthwise into 1/2-inch-thick planks; place in a large bowl. Toss with oil, salt, and pepper. Grill planks, covered, for 8–10 minutes, turning once.

Drizzle planks with more oil and toss with parsley before serving.
