- DOUGH
- 1 1/2 oz fresh yeast
- 3/4 cup very warm water
- 5 cups flour
- 1/2 cup orange juice
- 2 sticks margarine
- 1 egg
- 2 eggs,separated
- 1/2 cup sugar
- 1 Tbs vanilla sugar
- FILLING
- 1 lb whipped cream cheese
- 3/4 cup sugar
- 1 Tbs vanilla sugar
- 1 egg,separated
- 1/3 cup chocolate chips

Step 1
In the bowl of a mixer combine the yeast with warm water. Sprinkle a bit of the sugar on this mixture and let stand until the yeast bubbles. Add the flour,juice,margarine,egg,egg yolks,sugar,and vanilla sugar. Mix well until a dough forms. Cover and let rise for 1 Hr.
Preheat oven to 350
To prepare the filling,combine the cream cheese,sugar,vanilla sugar and egg yolk.
Set aside egg whites for egg wash.
Divide the dough into 3-4 pieces. Working with one piece at a time,roll out each piece into a rectangle. Spread 1/6 of the filling over the dough and sprinkle it with chocolate chips. Roll up,jelly roll style. Slice into buns about 2-3 finger wide. Transfer the buns into the greased cups of a muffin pan.(they need not entirely fill the indentation,the buns will grow as they bake) Brush with reserved egg whites.
Bake for 25-30 min,until golden. Remove from pan and cool on a rack.
To make a large babka,pile buns into a tube pan and bake for 45 min.
