Ingredients
- 4 cups chopped onions, carrots and celery
- minced garlic
- 4 tsp vegetable oil
- 4 pounds dried split peas
- 4 pounds ham with bone
- salt and pepper

Preparation
Step 1
In a large pot, saute onions, carrots, celery and garlic.
Add the split peas, ham bone and enough water to cover the ingredients. Season with salt and pepper.
Cover and cook until there are no peas left, just green liquid about 2 hours. While it is cooking check to see if the water has evaporated. You may need to add more water.
Once the soup is green, remove ham bone. Dice the remainder of ham meat and remove from heat and let stand to thicken.
