Ingredients

  • 1 1/4 cups all-purpose flour
  • 1 cup quick cooking oats
  • 1/2 cup brown sugar
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 1/2 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1 eg, lightly beaten
  • 1 cup (8 oz) plain yogurt
  • 1/4 cup butter, melted
  • 1 cup fresh blueberries

Preparation

Step 1

1. In a large bowl, combine the first eight ingredient. Combine the egg, yogurt and butter; stir into dry ingredients just until moistened. Fold in blueberries.

2. Coat muffin cups with cooking spray. Fill three-fourths full with batter. Bake at 400° for 18-22 minutes or until a toothpick comes out clean. Cool for 5 minutes before removing from pan to a wire rack.
