Ingredients

  • 1/3 cup chopped onion
  • 5 tablespoons butter or margarine
  • 5 tablespoons all-purpose flour
  • 1 1/4 teapoons salt
  • 1/2 teaspoon pepper
  • 5 cups milk
  • 6 cups thinly sliced potatoes

Step 1

1. In a large saucepan, saute onion in buttter until tender. Stir in flour, salt and pepper until blended. Gradually add milk. Bring to a boil; cook and stir for 2 minutes or until sauce is thickened.

2. Place half of potatoes in a greased 3-quart baking dish. Pour half of sauce over potatoes. Repeat layers. Bake uncovered, at 350 degrees F for 60-70 minutes or until potatoes are tender and top is lightly browned. Serve immediately.

Note: I made this and sliced potatoes on a mandoline and cooked until semi-tender then drained them and put them in the casserole dish. I also think about 7 or 8 cups of potatoes would be better. Was a little too runny. Also might add 1 and 1/2 cups of cheddar cheese. 1/2 cup in center of potato layer and another 1 cup on top. Grated of course. I only cooked about 45 minutes because potatoes were partly pre-cooked.

Casserole has a wonderful flavor and one of the best scalloped potatoes I have made thus far.
