Golden Onion and Thyme Dip

Ingredients
- For Dip:
- 2 T. olive oil
- 1 large Spanish or 2 large yellow onions (about 1 lb. total) finely diced
- 8 ounces cream cheese
- 6 T. sour cream
- Pinch of cayenne
- Freshly ground black pepper
- Pita Chips (recipe follows)
- For Chips:
- 2 pita breads (plain and 8" wide)
- 3 T. olive oil
- Kosher salt

Step 1
Heat the oil in a large skillet over medium-high heat. Add the onion, season with 1/2 t. salt, and saute, stiring often, until the onion softens completely and starts to brown, about 9 minutes. Transfer to a food processor and add the cream cheese, sour cream, thyme, and cayenne. Pulse until the mixture is well combined. Season with salt and pepper to taste. Refrigerate until ready to serve.
For Chips:
Heat the oven to 450 degrees. Slice each pita into 8 even triangular pieces and then tear each piece apart at the seam to get a total of 32 pieces. Toss the pieces in a large bowl with the oil, 1/4 t. salt, and some pepper. Spread in a single layer on a large baking sheet. Bake, flipping after 5 minutes, until the chips are crisped and slightly browned, about 7 minutes total.
