Ingredients

  • TOPPINGS:
  • 2 lbs. ground beef
  • 1 large onion, chopped
  • 1 can (14 1/2 oz.) tomatoes with liquid, cut up
  • 1 can (12 oz.) tomato paste
  • 1 can (15 oz.) tomato puree
  • 2 TBSP. chili powder
  • 1 tsp. ground cumin
  • 1/2 tsp. garlic powder
  • 2 tsp. salt
  • 1 can (28 oz.) ranch-style beans, undrained
  • 1 pkg.( 10 1/2 oz.) corn chips
  • 2 c. cooked rice
  • 2 c. (8 oz.) shredded cheddar cheese
  • 1 med. onion, chopped
  • 1 head iceberg lettuce, shredded
  • 3 medium tomatoes, chopped
  • 1 can (2 1/4 oz.) sliced ripe olives, drained
  • 1 c. picante sauce, optional

Preparation

Step 1

in a large skillet or Dutch oven, brown beef and onion; drain. Add next seven ingredients; simmer for 1 1/2 hours. Add beans and heat through. On a platter, layer the corn chips, rice, meat mixture, cheese, onion, lettuce, tomatoes and olives. Serve with picante sauce if desired.
