Salmon Loaf (Mum)

Ingredients

  • 2 cans red salmon (15 oz ea) drained and flaked (reserve liquid)
  • 2 eggs
  • Milk
  • 3 cups coarse bread crumbs
  • 2 tbsp. lemon juice
  • 2 tsp chopped onion
  • 1/4 tsp salt
  • 1/4 tsp pepper
  • 2 tbsp. melted butter

Preparation

Step 1

Mix salmon and eggs. Add enough milk to the reserved salmon liquid to measure 1 1/2 cups. Stir liquid mixture and remaining ingredients into salmon mixture. Spoon lightly into greased loaf pan. Bake uncovered 350 for 45 minutes.
