Ingredients
- 4 ounces cod
- Cajun Seasoning
- 1/2 lemon
- Cooking spray
- 1/2 red pepper, sliced
- 2 cups sliced yellow and green zucchini
- 1/2 cup chopped bok choy, (cut into 1/2-inch pieces)
- 1 teaspoon extra virgin olive oil
- Siracha Hot Sauce (optional)

Preparation
Step 1
Spray skillet with cooking spray. Coat both sides of cod with Cajun seasoning. Put cod in pan. Add 1/4 lemon, juiced. In another pan, add olive oil. Then add veggies. Saute until al dente.
Put lines of Siracha on the plate. Add cod to plate. Add remainder of lemon juice. Add veggies.
