Ingredients

  • 1

    cup chopped onions

  • 2

    cloves garlic, minced

  • 2

    tbs olive oil

  • 3

    celery stalks, thinly sliced

  • 2

    tsp fresh thyme

  • 1

    tsp fresh marjoram (½ tsp dried)

  • 2

    cups canned tomatoes (15oz can)

  • 1

    tbs tomato paste

  • Salt and Pepper to taste

  • 3

    cups cooked rice

Directions

1. In a large skillet, saute the onions and garlic in the oil on medium heat for about 5 min, until softened. Stir in the celery, thyme and marjoram and saute for 2 more min. 2. Drain the tomatoes reserving the juice. Stir in the drained tomatoes and the optional tomato paste. Add salt and pepper to taste. 3. Stir in the rice and mix thoroughly. If the rice is too dry or firm, add some of the reserved tomato juice to reach an agreeable texture. When the rice is hot and the juice has been absorbed, the dish is ready to serve.
