Ingredients

- 1 Tbs coconut oil
- 1 large onion, finely chopped
- 5 garlic cloves, finely chopped
- 1 jalapeno, seeded and chopped (or Anaheim or poblano for milder)
- 1 1/2 Tbs ground cumin
- 1 1/2 Tbs dried oregano
- 1 1/2 tsp sea salt
- 8 cups vegetable stock
- 29 oz can pure pumpkin puree
- 15 oz can white beans (drained)
- 2 Tbs. red wine vinegar
- 2 Tbs. pure raw honey
- Cinnamon or roasted pumpkin seeds for garnish (optional)

Warm October Pumpkin Soup
Everyone is always looking for cheat free recipes, where you get all the EATS, none of the CHEATS and you feel full. This is what really makes your weight loss happen. This Warm October Pumpkin Soup is a total winner!
Blender or hand held blender (recommended)
1) Heat a large skillet over medium heat
2) Add oil, onion, garlic and jalapeno (or other pepper)
4) Stir in cumin, oregano and salt.
6) Add stock, pumpkin and beans to the pot.
7) Simmer for about 20 minutes, uncovered
8) Add vinegar and honey
9) Simmer another 3-5 minutes
10) If using a hand held blender, blend soup until smooth. If using a blender, pour soup in blender and blend until smooth – open lid to vent, it can splash
Side note: Cinnamon, cumin – they’re anti-inflammatory and can make your skin look fresh and glowy!
Alot of these soup recipes are blended. Is there a reason we need to blend them or can we not. I prefer my soup not blended so am just wondering if it is necessary. Thank-you.
