Chicken Meatballs with Gravy

Ingredients
- 1 pound ground chicken breast (no skin) (I use my food processor)
- 1/2 cup finely chopped onion
- 1 egg
- 1/8 cup plain bread crumbs (I prefer 1/4 cup)
- Salt and pepper to taste
- Italian seasoning (optional)
- 1 Packet Chicken Gravy (envelope seasoning)
- 1 Can Cream of Mushroom Soup
- Non-Stick cooking spray
- >>optional homemade gravy: (half of this recipe is enough)
- 1/2 stick (1/4 cup) butter
- 1 pound mushrooms, sliced
- 1/3 cup flour
- 1 quart cold beef, chicken or vegetable stock,or broth
- 1/2 tsp dried thyme
- fresh rosemary
- salt and fresh ground black pepper to taste

Step 1
Preheat oven to 350 degrees.
Combine the ground chicken, onion, egg, bread crumbs and salt & pepper in a mixing bowl. Roll into meatballs. Bake on lightly sprayed cookie sheet for 10-12 minutes (you don't want any pink but you also do not want to overcook). While the meatballs are cooking, make chicken gravy in small saucepan. Combine the can of Cream of Mushroom soup and seasoning packet, till bubbling. Pour gravy over meatballs or serve with mashed potatoes and drizzle gravy over both (1 serving of gravy is about 1/2 cup).
>>Directions for homemade gravy:
Melt the butter in a large saucepan, over medium-high heat. When the butter starts to sizzle, add the mushrooms and cook, stirring for 10 minutes, or until the mushroom juices have evaporated and they've begun to brown. Stir in the flour, reduce the heat to medium, and cook for another 5 minutes.
Whisk in 1 cup of the cold broth. Once incorporated, pour in the rest of the broth, and add the thyme and rosemary. Bring back to a simmer, reduce the heat to low, and simmer gently for 30 minutes, stirring occasionally. Season with salt and fresh ground black pepper to taste. Serve hot.
Note: For thicker gravy, turn heat up to medium, and reduce to desired thickness. For thinner gravy, simply add more broth.
