  • 3/4 c. shortening
  • 1 c. sugar
  • 2 eggs
  • 1 tsp. vanilla
  • 3 1/2 – 4 c. flour
  • 2 tsp. baking powder
  • 1 tsp. salt
  • 1/4 c. milk

Step 1

Cream together - 3/4 cup shortening and 1 cup sugar. Add and blend: 2 eggs and 1 teaspoon vanilla. Add alternately and mix well - 3 1/2 - 4 cups flour, 2 teaspoon baking powder, 1 teaspoon salt, 1/4 cup milk. Chill dough. Divide into 6 parts. Roll out thin (1/4-inch - 1/2 inch). One way is to roll on upside down an 8 or 9 inch cake pan. And cut around edges with sharp knife. Bake on cookie sheet in 400 oven 12-15 minutes. Cool, then spread each layer (except top) with prune filling. Stack. Filling: Boil until mushy, one pound prunes in water to cover. Add rind and juice of 1 lemon. Optional: Almond extract, vanilla or brandy; crushed cardamom seeds.
