Ingredients
- 6 good size baking potatoes
- 1 bunch green onions, sliced thin
- 2 tbsp. margarine
- 1/8 tsp. black pepper
- pinch paprika
- 1/2 to 1 c. sour cream
- 1/4 c. milk
- pinch salt
- grated cheddar cheese

Step 1
Preheat oven to 400. Clean potatoes and poke holes all over them. Bake them for at least one hour or more. Cool potatoes, sliced in half. Scoop out the inside of the potatoes into a bowl leaving the potato skins. Mash the pulp of the potatoes with an electric hand mixer. Add the sour cream, milk, margarine, salt, pepper and chopped green onions. Fill the potato skins with mixture. Sprinkle the grated cheese on top ending with the paprika. Can be made ahead and kept in the refrigerator or bake right away at 350 for 20 minutes ending with broiling the potatoes for 3 minutes to make them brown.
