  • 1 roast 2-2.5 pounds
  • 1 Tbs olive oil
  • 1 packet Good Seasons Italian Dressing Mix
  • 1 jar (2 pound) Pepperoncini (Greek salad) Peppers

Preparation

Step 1

1 In a Dutch oven, heat the olive oil, and brown the roast on both sides. Sprinkle the dry salad dressing mix over the top of the roast. Then pour out the peppers on top of the roast, juice and all.
2 Cover and bake at 250 degrees for 3-4 hours or until the meat falls apart. As long as your lid fits tight on the Dutch oven, you should not have to add any water. The vinegar in the pepper juice tenderizes and gives it a real tang along with a little heat
