Ingredients
- 1 red bell pepper
- 1 green bell pepper
- 1 yellow bell pepper
- 1/2 c. red onion, diced
- 1- 16 oz. can corn, drained
- 1 clove garlic, minced
- tortilla chips; optional
- 1 tsp. cilantro
- 1/4 c. olive oil
- 4 tbsp. red wine vinegar
- 1 tsp. lime juice
- freshly ground pepper
- 1- 15 oz. can Bush’s black beans, drained

Preparation
Step 1
Seed and dice all bell peppers. In a salad bowl, combine peppers, onion, corn, garlic and cilantro. Toss to mix. Add olive oil, vinegar, lime juice and salt and pepper to taste. Toss again. Add beans, toss well.
