Ingredients
- 1 tsp. dried Italian seasoning
- 1/2 tsp. dried basil
- 1/2 tsp. each salt and pepper
- 4 chicken breasts
- 2 tsp. olive oil
- 1 large onion, thinly sliced
- 1 lb. sliced mushrooms
- 1 tbsp. chopped fresh thyme
- 2 tbsp. whole wheat flour
- 1 cup low-fat, low-sodium chicken stock

Step 1
In a small bowl, combine seasoning, basil and 1/4 tsp. each of the salt and pepper. Sprinkle evenly on chicken. Heat oil in large non-stick pan over med. high heat. Brown chicken on both sides. Transfer to plate. Add onion, mushrooms, thyme and remaining salt and pepper to the pan. Cook, stirring, for 10 mins. Sprinkle with flour and cook, stirring for 1 min. Pour in stock, stirring to combine and bring to boil. Reduce heat and simmer for about 3 mins. or until slightly thickened. Return chicken to pan and cook, turning occasionally for about 5 mins. or until done.
