Ingredients
- 3 cups dried split peas
- 7-8 cups veg broth/stock
- 1 bay leaf
- 2 tsp salt
- 1 tsp dried mustard
- 2 chopped onions or leeks
- 2-3 chopped carrots
- 2 stalks chopped celery
- 1 chopped potato
- black pepper
- 2 tomatoes
- 4 tbsp vinegar

Preparation
Step 1
place peas, broth, and seasonings into large stockpot
bring to a boil, reduce heat and simmer partially covered for 20 minutes
Add vegetables and simmer partially covered for 40 minutes. may need to add water or broth
season with pepper, vinegar, and sliced tomato
