Ingredients
- 1 1/2 lb. ground beef
- 1/2 c. chopped onion
- 2 c. water
- 2- 6 oz. cans tomato paste
- 2 tbsp. parsley optional
- 2 tsp. oregano
- 1 1/2 tsp. salt
- 1 tsp. sugar
- 1/2 tsp. instant garlic
- 7 manicotti shells
- 3-4 c. shredded mozzarella cheese
- 1/2 c. Parmesan
- 2 slightly beaten eggs
- 1/2 tsp. salt

Step 1
Brown meat and onion. Add water, tomato paste, parsley, oregano, salt, sugar and garlic. Simmer, uncovered for 30 minutes, stirring occasionally. At same time, cook manicotti shells in boiling salted water until just tender; about ten minutes. Drain carefully and rinse in cold water. Combine cheeses, eggs and salt. Stuff the shells with the cheese mixture. Pour half the meat sauce in a 9 x 13 pan and arrange the shells on top. Add any remaining sauce on top then any extra cheese mixture. Cover and bake for 30-35 minutes at 350. Allow to stand a few minutes before serving.
