  • Canola oil
  • Kosher or Sea Salt

Step 1

Preheat oven to 350 degrees. Put whole potatoes in oven and bake for 1 hour 10 minutes, or until potatoes are tender and baked through. Remove from oven and allow to cool. Store potatoes in the refrigerator for up to 4 days. (This step is crucial, potatoes must spend at least 24 hours in the refrigerator before continuing)

In a 4 quart sauce pan, bring 2" of canola oil to 350 degrees. Remove potatoes from refrigerator and slice into thin slices, again leaving skin on. Drop small handfuls of potatoes into oil and cook until golden brown. Toss with sea or Kosher salt immediately. Continue in batches until all potatoes are cooked.

Option: Fries can be served with a simple gremolata of minced parsley, lemon zest, garlic and shaved parmesan. Or for a quick sri-rancha sauce mix 2 cups store bought ranch dressing, juice of 1/2 lemon and 1/4 cup sriracha hot sauce.
