Blueberry Grunt

Also known as blueberry slump, these are dumplings that cook on top of bubbling blueberries.

Ingredients
- Dumplings:
- 4 cups blueberries
- 1 tablespoon lemon juice
- 1/2 cup water
- 1/4 cup sugar
- 1/2 teaspoon cinnamon
- 1 cup flour
- 1 teaspoon baking powder
- 2 tablespoons sugar
- 1/4 teaspoon salt
- 1 large egg
- 3 tablespoons milk
- 2 tablespoons unsalted butter, melted
- Whipped cream:
- 1 cup cold whipping cream
- 1 teaspoon vanilla
- 1 tablespoon confectioners' sugar

Step 1
In 3-quart stainless steel saucepan, combine blueberries, lemon juice, water, sugar and cinnamon. Cook over medium heat until sugar dissolves. Cover and bring mixture to a gentle boil while you mix dumpling dough.
Dumplings: In large bowl, sift together flour, baking powder, sugar and salt. Stir in egg, milk and melted butter until soft dough forms and ingredients are blended together.
Uncover saucepan of bubbling blueberries and drop rounded tablespoons of the dough onto the blueberries. Space dumplings evenly around the blueberries. Reduce heat to low.
Cover the saucepan and cook the dumplings for 10 minutes while keeping mixture at a gentle simmer. Do not lift the lid. If steam is pouring out from under the lid, it is cooking too vigorously and heat should be lowered.
Whipped cream: In a large, chilled mixing bowl, whip whipping cream with vanilla and confectioners' sugar into soft peaks.
To serve, spoon 1 or 2 warm dumplings onto individual serving dishes. Spoon blueberries over dumplings to cover them and top with whipped cream.
