Ingredients

  • 2 cups sweet potatoes, peeled and cooked
  • 1 cup sugar
  • 4 Tbsp. melted butter
  • 2 eggs
  • 1 Tbsp. cayenne pepper
  • 2 Tbsp. bourbon
  • 1/4 tea. salt
  • 1/4 tea. cinnamon
  • 1/4 tea. ginger
  • 1 cup milk
  • 1 9" unbaked pie crust
  • 1/2 cup pecan halves

Step 1

Preheat oven to 350 degrees.

Make the filling: combine the potatoes, sugar, butter, eggs, cayenne, bourbon, salt, cinnamon and ginger. Mix thoroughly using an electric had mixer. Gradually add the milk and continue to mix. Pour the filing into the pie crust and top with pecans.

Bake for 35 - 45 minutes, or until a knife inserted in the center comes out clean. Place the pie on a rack and cool to room temperature.

To serve, add whipping cream. I like to lightly sprinkle with a dusting of cayenne pepper.
