Ingredients

  • 2 c. flour
  • 1/2 c. powdered sugar
  • 1 c. butter (use butter)
  • 4 eggs, beaten
  • 2 c. white sugar
  • 1/3 c. lemon juice and 1 tsp. lemon extract
  • 1 tbsp. grated lemon rind
  • 1/2 c. flour
  • 1/2 tsp. baking powder

Step 1

Mix the flour and powdered sugar and cut in the butter as you would for pie crust. When very fine, press into bottom of a 9x13 pan. Bake at 350 degrees for 20-25 minutes, or until it is light brown around the edges, don’t over bake. While that is baking, mix eggs beaten, white sugar, lemon juice, lemon extract, grated lemon rind, flour, baking powder. When the crust is baked, remove from oven and pour the egg mixture over it, spreading out the edges. Bake at 350 degrees for about 25 additional minutes. Should be slightly brown around the edges and feel firm to the touch in the center. Sprinkle with powdered sugar and cool before cutting into bars. You can cut these fairly small because they are very rich. Using butter rather than margarine makes these just melt in your mouth.
