  • 2 (8 oz pkgs) cream cheese
  • 1 lb butter
  • 4 cups flour
  • 2 cups walnuts finely chopped
  • 1/2 cup cinnamon sugar
  • 2 cups flaked coconut
  • 1 large jar apricot or peach preserves

Step 1

Blend cream cheese, shortening and four cups of flour with pastry blender. Divide into 8 balls and refrigerate dough until firm enough to roll out.
Roll out each ball into a rectangle as long as a cookie sheets, about 1/8 inch thick. Spread preserves on dough; sprinkle generously with nuts, cinnamon sugar and coconut. Roll up tight like a nut roll, place on a cookie sheet - 4 per sheets. Bake for 1 hour at 325°. Cool for 10 minutes hen slice 3/4 inch to 1 inch thick slices. Sprinkle with confectioners' sugar.
