Ingredients
- 4 cups dashi
- 1 cup well-packed bonito flakes
- 1/4 cup sake
- 1/4 cup mirin
- 1/4 cup soy
- 1 tsp sugar
- 1 tsp salt
- 8 pieces shrimp tempura
- 1 pound soba
- a scallion, thinly sliced
- 4 sprigs mitsuba or parsley
- Shichimi togarashi

Preparation
Step 1
1. Place dashi in large pot over high heat. Stir in bonito flakes and bring to a boil. Turn off heat and strain dashi through cheesecloth. Into the strained dashi, add sake, mirin, soy, sugar, and salt. Bring just to aboil, reduce to very low and keep warm.
2. Make shrimp tempura.
3. Cook soba, drain, and rinse.
4. Bring dashi back to a boil. In large soup bowl, lay noodles and a piece of shrimp tempura. Cover with dashi. Garnish with scallion and mitsuba.
