Ingredients
- 2 lbs. cube steak or Bottom round, grounded, tenderized to 1/4-inch thickness
- 3 eggs, beaten
- 1/4 cup milk
- 1 cup flour
- 1/2 tsp smoked paprika
- 1/2 tsp chipotle powder
- Salt
- Freshly ground pepper

Preparation
Step 1
Whisk together the eggs with 1/4 cup milk.
Whisk together the flour with smoked paprika, chipotle powder and season with salt and pepper.
Season meat with salt and pepper.
Dredge meat in flour mixture, then egg mixture, the back to the flour mixture.
Heat oil in large skillet, add 1 tbsp. butter. Cook meat until edges start to look golden brown.
For the Gravy:
Without cleaning the skillet transfer the grease in a bowl. Add 1/4 cup of the grease to the skillet. Heat grease, using a whisk, add the 3 tbsp. of flour evenly over the grease and whisk creating a golden brown paste. Add more flour if it looks overly greasy, add a little more grease if it becomes too pasty/clumpy. Keep cooking until the roux reaches a deep golden brown color.
Whisking constantly, add 3 cups whole milk and 1 tsp fresh thyme and season with salt and pepper; whisking until the gravy is smooth and thick, adding more milk if gravy becomes too thick. Add lime zest and juice of 1 lime.
Note: By adding lime zest, the gravy taste less fatty.
