Corn Muffins

Ingredients

  • 1 C. corn meal
  • 1 C. flour
  • 2 T. sugar
  • 4 tsp. baking powder
  • 1/2 tsp. salt
  • 1 C. milk
  • 1/4 C. shortening
  • 1 egg

Preparation

Step 1

Heat oven to 425*.

Grease bottoms of 12 muffin cups. Blend all ingredients about 20 seconds. Beat 1 minute.

Fill muffin cups 2/3 full. Bake 15 minutes; remove muffins from pan immediately.
