Ingredients
- 1/4 cup balsamic vinegar
- 2 Tbs. Dijon mustard
- 2 Tbs. olive oil
- 1 tsp. freshly ground pepper
- 1/2 tsp. salt
- 3 garlic cloves, minced
- 2 medium zucchini halved lengthwise (about 1 pound)
- 1 red bell pepper, quartered
- 1 yellow bell pepper, quartered
- 4 (1/2") slices Vadalia onion
- 4 (4") portobello caps
- 4 cups hot cooked basmati rice
- 1/2 cup (2 oz.) feta, crumbled

Preparation
Step 1
1. Prepare grill
2. Wisk vinaigrette ingredients together
3. Prepare vegetables. Marinate zucchini and peppers in bowl. Brush marinade over onion and mushroom caps. Grill 2 1/2 minutes per side, or until brown and tender.
4. Cut vegetables in half, and serve over rice, topping with cheese.
