Ingredients

  • 4 Boneless Skinless CHICKEN BREAST Halves
  • 1 Cup Fresh White BREAD CRUMBS
  • 1/3 Cup Grated ROMANO CHEESE
  • 1 1/2 tsp. PAPRIKA
  • 3 Tbsp. Fresh THYME
  • 4 oz. MUENSTER CHEESE, cut into 4-inch sticks
  • OLIVE OIL

Preparation

Step 1

1) Preheat oven to 400°F.

2) Lightly grease small baking sheet.

3) Place CHICKEN BREAST between sheets of waxed paper and pound to 1/4-inch thickness, using mallet or rolling pin. Season with SALT & PEPPER.

4) Combine BREAD CRUMBS, ROMANO CHEESE, PAPRIKA, & THYME in shallow dish.

5) Place 1 MUENSTER CHEESE stick at short end of each CHICKEN BREAST. Roll up CHICKEN BREAST, enclosing MUENSTER CHEESE stick. (Trim MUENSTER CHEESE sticks even with ends of CHICKEN BREASTS if necessary.)

6) Brush CHICKEN BREAST rolls with OLIVE OIL. Dip into BREAD CRUMB mixture, pressing crumbs to adhere.

7) Arrange CHICKEN BREAST rolls seam side down on prepared baking sheet. (Can be prepared 8 hours ahead. Cover and refrigerate.)

8) Bake CHICKEN BREAST rolls until cooked through and coating is crisp, about 15 minutes.
