Ingredients

  • 1/2 to 1/3 pkg. bacon, chopped
  • 2 garlic cloves, minced
  • 1 onion, chopped
  • 1 celery stalk, chopped
  • 1 green pepper, finely chopped
  • 1-2 jalapeno peppers, seeded & finely chopped
  • 2 bay leaves
  • 1/2 tsp. dried thyme
  • 2 tsp. parsley flakes
  • 1 can (14 oz.) tomatoes
  • 1 can (5 1/2 oz.) tomato paste
  • 1/2 tsp. salt & 1/4 tsp. pepper
  • 2 lbs. raw shrimp
  • Scallops, optional
  • 2 cups cooked rice

Preparation

Step 1

In a large skillet, fry bacon. Drain off all but 1 Tbsp. of drippings. Add garlic, onion, celery & peppers. Cook until onion is tender. Add bay leaves, thyme, parsley, tomatoes, tomato paste, salt & pepper. Bring to a boil. Reduce heat & cook slowly for 20-30 min. Add shrimp & cook for 5 more min. Serve over rice.

Add scallops, if desired, with shrimp.
