- 1/4 cup olive or vegetable oil
- 1/2 teaspoon garlic powder
- 4 bone-in chicken breast halves
- 2 medium potatoes, cut into small chunks
- 2 carrots, sliced

Step 1
Preheat oven to 450 degrees. In large plastic bag or bowl, combine all ingredients. Close bag and shake or toss in bowl until chicken and vegetables are evenly coated.
In a 13x9" baking or roasting pan, arrange chicken, breast side up, and vegetables; discard bag.
Bake uncovered 45 minute or until chicken is no longer pink and vegetables are tender, basting halfway through cooking time.
