Ingredients

  • Marinade:
  • Approx. 1 1/2 lbs boneless, skinless chicken breasts.
  • 2 red peppers, cut into large chunks
  • 4 green onions, cut into 1 inch pieces
  • 1 yellow summer squash
  • 1 green summer squash
  • 1/2 cup peanut butter
  • 1/4 cup peanut or vegetable oil
  • 2 tbs white wine vinegar
  • 2 tbs fresh parsley, chopped
  • 2 tsp red pepper flakes (more or less to taste)
  • 1/4 cup soy sauce
  • 2 tbs lemon juice
  • 4 garlic cloves, minced or pressed
  • 2 tsp finely chopped fresh ginger root
  • 1 tbs chopped cilantro (optional)

Preparation

Step 1

1. Cut the chicken breasts into kabob-sized pieces (approx. 2-in. cube).
2. Mix marinade ingredients and whisk or stir until smooth. Add a few tbs of water if too thick. Reserve 3/4 cup for dipping, if desired. Marinate chicken 20 minutes or longer.
3. Prepare grill.
4. Using metal or bamboo skewers (soak bamboo skewers 15-20 minutes), skewer chicken pieces and vegetables onto skewers.
5. Grill 8 to 10 minutes (turning occasionally).

Approximately 6 servings.
