Ingredients
- 6 cups chopped Hatch green chiles, seeded and stemmed
- 1 clove garlic, minced
- 1 medium onion, coarsely chopped
- 1/8 tea. ground coriander
- 1/2 Tbsp. green chile powder
- 1/2 ta. white pepper
- 12 tea. ground cumin
- 1 Tbsp. salt
- 11 1/2 cups water, divided
- 12 Tbsp. cornstarch

Preparation
Step 1
In a large stockpot, combine the green chiles, garlic, onion, coriander, green chile powder, white pepper, cumin, salt and 10 cups of water. Bring to a boil and boil, uncovered, for 1 hour.
In a small bowl, combine the cornstarch and 1 1/2 cups water and mix thoroughly. Add to the chile mixture and cook until th3 mixture clears, about 20 minutes.
