Ingredients
- 4 cups sugar
- 1 cup whipping cream
- 1/2 cup milk
- 1 tbsp. light corn syrup
- 1/2 tsp. cream of tartar
- 2 tsp. vanilla

Step 1
Using a 6 quart pan, combine all ingredients except cream of tartar. Stir until sugar dissolves. Bring to a boil, cover, and cook for 3 minutes. Remove lid, add cream of tartar. Cook uncovered to 236 degrees, (soft boil). Remove from heat and let sit until bubbles stop rising in pan. Pour onto wet platter. Let sit until cool. Add vanilla and knife until hard. (Just before it sets, spread into buttered pan).
While cooking, wipe sides of pan with a wet brush. Do not stir while cooking. Do not scrape pan after pouring candy onto platter.
To knife - use broad knife and go under and up through candy. It takes about a half hour, before it changes to a white color and begins to set. When it goes, it goes fast, so have a pan ready.
