Pecan Cinnamon Roll Cookie Sandwiches

Ingredients
- 1 packet of Duncan Hines® Frosting Creations™ Cinnamon Roll Flavor Mix and 1 can of Frosting Creations™ Frosting Starter
- 2 2/3 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1 cup butter, softened
- 1 cup packed light brown sugar
- 1/2 cup granulated sugar
- 1 egg, beaten
- 1 teaspoon vanilla extract
- 2 tablespoons milk
- 1/2 cup finely chopped pecans

Preparation
Step 1
1. Pour pack of Duncan Hines® Frosting Creations™ Cinnamon Roll Flavor Mix into can of Duncan Hines® Frosting Creations™ Frosting Starter. Stir until evenly blended.
2. Preheat oven to 350 degrees. Line a large baking sheet with parchment paper; set aside.
3. In a medium bowl, mix together the flour, baking soda, baking powder, cinnamon and nutmeg; set aside.
4. In a large bowl, cream together the butter, brown sugar, and granulated sugar. Mix in the egg and vanilla. Gradually add in the flour mixture. Add in the milk and pecans and mix just until combined.
5. Using a 1 tablespoon cookie scoop, drop dough onto prepared baking sheet, about 2 inches apart. Place in preheated oven and cook for 10-12 minutes, until cookies are set and lightly browned. Let rest on baking sheet for 2 minutes, remove to wire rack to cool completely.
6. Continue baking cookies in this same process to make 60 cookies.
7. When cookies have completely cooled, spread prepared frosting evenly over the flat sides of 30 of the cookies, top with remaining cookies to make 30 cookie sandwiches.
