Ingredients

  • Cupcakes:
  • 1 1/4 cups all-purpose flour
  • 1 tbsp baking powder
  • 1/8 tsp baking soda
  • 1/2 tsp salt
  • 1/3 cup shortening
  • 1/3 cup peanut butter
  • 1 cup lightly-packed brown sugar
  • 2 eggs
  • 3/4 milk
  • 1 tsp vanilla
  • Icing:
  • 1/4 cup butter
  • 1/3 cup peanut butter
  • 1 egg white
  • 2 cups icing sugar
  • 1 tbsp (about) cream
  • 1/2 tsp vanilla

Preparation

Step 1

Cupcakes:

Sift together first 4 ingredients;
Cream shortening and peanut butter;
Add sugar and eggs;
Combine milk and vanilla;
Add flour mixture to creamed mixture alternately with milk;

Spoon batter into lined muffins tins.

Bake in 350 F oven for 25 mins, or until toothpick inserted in centre comes out clean. Cool 10 minutes in pan; turn out on wire rack to cool.
Ice with peanut butter icing.

Icing:

Cream butter, blend in peanut butter and unbeaten egg white;
Add icing sugar alternately with cream to spreadable consistency;
Beat in vanilla
