Ingredients

  • 2 pounds yellow summer squash, thinly sliced on a diagonal
  • 3/4 cup shredded reduced-fat sharp cheddar cheese, divided
  • 1/4 cup reduced-fat mayonnaise
  • 1/4 cup liquid egg substitute
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper

Preparation

Step 1

•Preheat oven to 350 degrees F. Coat a 2-quart baking dish with cooking spray.


•In a large saucepan, add squash with enough water to cover; bring to a boil. Reduce heat to medium and cook 8 to 10 minutes, or just until squash is tender. Drain well in strainer and gently press out liquid with fingers.


•In a large bowl, combine squash, 1/2 cup cheese, mayonnaise, and egg substitute. Spoon into prepared baking dish. Sprinkle with remaining cheese.


•Bake 30 minutes, or until golden and heated through.
