Caramelized Corn With Basil

The corn is cooked in butter until golden brown and then tossed with fresh basil. You can use either fresh or frozen corn and it can be either the yellow or white variety.

- 4 -5 cups fresh corn kernels (from about 12 cobs or 32 oz frozen corn)
- 4 ounces unsalted butter
- 1/2 cup fresh basil, chopped

Total Time: 50 mins
1 NOTE: If using frozen corn it must be thawed and drained on paper toweling for about 30 minutes.
2 Use a wide skillet and melt half the butter over high heat.
3 Add half the corn and cook, stirring often, until corn is golden and browned, about 10 minutes.
4 Stir in half the basil, season with salt and pepper, then transfer to a serving bowl.
5 Repeat with remaining ingredients and serve.
