Peanut Brittle in a Snap

- 1 cup Granulated Sugar
- 1/2 cup Light corn syrup (Karo Clear works well) 1 1/2 cups Peanuts
- 1/8 tsp. Salt
- 1 tsp. Vanilla extract
- 1 tsp. Butter
- 1 tsp. Baking soda

Cover a cookie sheet with aluminum foil; spray lightly with Pam
In a large microwave-safe bowl (best luck with one with straight sides), combine sugar, light corn syrup, peanuts and salt and mix together. Place in the microwave and heat on high for 8 minutes, stirring well halfway through.
Stir in vanilla and butter and microwave for another 2 minutes on high.
Carefully take the bowl out - it will be extremely hot. Add baking soda and stir until you see the mixture is foamy and light, but don't over stir.
Quickly pour onto the baking sheet, using a metal knife.
Evenly spread to about 1/4 thick. Let it cook, then break the peanut brittle into big pieces.
Store in an airtight container or zip-top bag. Yields about a pound of peanut brittle.
Use a Corningware bowl. Recipe calls for raw peanuts with the red skin on but dry roasted peanuts purchased from Dollar Store for $1 worked just as well. You can just butter the cookie sheet. Takes 20 minutes from start to finish except for cooling the candy.
Watch your cooking times bc different microwaves can burn the peanuts depending on their power.
