Ingredients

  • Herb Oil:
  • 1/4 cup chopped fresh parsley
  • 2 tbsp chopped fresh chives
  • 2 tbsp olive oil
  • salt and pepper
  • Surf and Turf:
  • 6 jumbo shrimp, peeled and deveined
  • 2 tbsp olive oil
  • juice of 1/2 lemon
  • 2 tsp chopped fresh thyme
  • pepper
  • 6 slices pancetta (2 oz)
  • 1 10 oz piece beef tenderloin, trimmed
  • 1 tbsp butter

Step 1

Make herb oil:
Pulse parsley, chives and olive oil in a food processor until smooth. Thin with water, if necessary. Add pinch salt and pepper. Transfer to a bowl, set aside.

Make surf and turf:
Toss shrimp, olive oil, lemon juice, thyme and pepper to taste in a bowl. Wrap each shrimp with a piece of pancetta.
Preheat the broiler. Arrange shrimp on a foil lined pan. Season the beef with salt and pepper. Heat an ovenproof skillet over high and add the butter. Sear the beef until golden brown, 3 minutes per side. Using tongs, hold the meat and sear the sides. Transfer skillet to broiler and cook about 4 more minutes, until medium rare. Transfer to a cutting board to rest. Broil the shrimp until the pancetta is crisp, 2 minutes per side.
Slice the beef into 4 pieces. Serve with shrimp and herb oil.
