  • 1-3/4 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1-1/4 cups sugar
  • 1/2 cup margarine, softened
  • 2 large eggs
  • 1 egg white
  • 3/4 cup orange juice
  • 1/2 cup skim milk
  • 1/2 cup poppy seeds
  • 1/2 cup low-fat sour cream
  • 1 Tablespoon grated orange peel
  • Confectioners’ sugar for garnish
  • Red and green grapes for garnish

Step 1

Preheat oven to 350 degrees. Spray an 8-cup fluted cake pan with vegetable cooking spray. Set aside.
In a medium bowl, combine flour and baking powder.
In a large mixing bowl, using an electric mixer set on medium speed, beat together sugar and margarine until light and fluffy. Beat in eggs and egg white. Beat in orange juice, milk, sour cream, poppy seeds and orange peel until blended.
Reduce mixer speed to low. Beat in flour mixture until blended. Spoon batter into prepared pan; smooth top.
Bake cake until top is golden brown and a toothpick inserted near the center comes out clean, about 55 minutes.
Place pan on a wire rack and cool slightly. Turn cake out onto rack and cool completely. Dust with confectioners’ sugar. To garnish, aarrange red and gren grapes in cake center.
