Ingredients

  • BLUEBERRY MUFFINS:
  • 1 egg
  • 3/4 cup milk
  • 1/2 cup vegetable oil
  • 2 cups all-purpose or whole wheat flour
  • 1/3 cup sugar
  • 3 teaspoon baking powder
  • 1 teaspoon salt
  • 1 cup fresh or 3/4 cup frozen blueberries (thawed and well drained) with the milk.
  • BUTTERMILK MUFFINS:
  • 3/4 cup buttermilk for the milk
  • 2 teaspoons baking powder (decrease to)
  • 1/2 teaspoon baking soda
  • CRANBERRY-ORANGE:
  • 1 cup cranberry halves
  • 1 tablespoon grated orange peel with the milk.
  • Sprinkle tops with sugar before baking.
  • HONEY:
  • 1/3 cup honey.
  • 2 tablespoons grated orange peel.
  • Stir in honey and orange peel with the milk
  • 1 teaspoon orange marmalade onto butter in each cup before baking

Step 1

Heat oven to 400°. Grease bottoms only of about 12 medium muffin cups, 2½x1¼ inches. Beat egg; stir in milk and oil. Stir in remaining ingredients all at once just until flour is moistened (batter will be lumpy). Fill muffin cups about 3/4 full. Bake until golden brown, about 20 minutes. Immediately remove from pan.
