Ingredients
- 1 lb. baby red potatoes, quartered
- 3/4 cup white wine
- 2 tbsp. extra virgin olive oil
- 1 tbsp. Dijon mustard
- 1-1/2 tsp. Herbes de Provence
- 1/2 tsp. sea salt
- 3 cloves minced garlic

Quarter 1 lb. baby red potatoes and toss with 3/4 cup white wine, 2 tbsp. extra virgin olive oil, 1 tbsp. Dijon mustard, 1½ tsp. herbes de Provence and 1/2 tsp. sea salt. Spread on a large baking sheet and roast at 400°F for 25 minutes or until soft, stirring frequently. Stir in 3 cloves minced garlic and cook for 5 minutes more.
