Ingredients
- 2 1/2 cups all-purpose flour, sifted
- 1 teaspoon salt
- 1 tablespoon baking powder
- 12 tablespoons (6 ounces) butter, frozen
- 2/3 cups (4 ounces) blue cheese crumbs
- 1/3 cup chopped fresh spinach
- 2 tablespoon fresh parsley leaves
- 1/3 cup chopped green onion
- 3 eggs beaten
- 2 cups to 3 cups buttermilk, divided

Step 1
Preheat oven to 350 degrees. Add all the dry ingredients into a large bowl and stir to combine. Grate the frozen butter into dry ingredients. Mix in the blue cheese, spinach, parsley, and green onions. Make a well in the center of the mixture.
Add the eggs and half of the buttermilk. Fold until just holding together, adding more buttermilk as needed. Line a sheet pan with parchment paper. Scoop 1/3 cup portions of batter onto the paper.
Bake for 22 minutes or until light golden brown.
