Ingredients

  • 6 Yukon Gold potatoes (about 2 lbs), peeled & cut in chunks
  • 1 onion, chopped
  • 1/2 cup buttermilk
  • 2 tbsp butter
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1/2 cup shredded old Cheddar cheese
  • 2 tbsp grated Parmesan cheese

Preparation

Step 1

In large pot of boiling salted water, cover and cook potatoes and onion until tender, about 15 minutes; drain.
Mash with buttermilk, butter and salt and pepper until smooth. Stir in cheeses and sprinkle with chopped fresh parsley.
