An easy, flavorful cucumber yogurt sauce for use with stuffed grape leaves or any food of your choice

Ingredients
- 1-2 English cucumbers, peeled, seeded, and grated (or finely processed in food processor)
- juice and zest of one lemon
- 4-5 tablespoons FRESH dill, finely chopped
- 2 tablespoons FRESH mint, finely chopped
- 2-3 cloves garlic paste (smash garlic cloves with side of knife until smooth)
- salt
- white pepper (approx. 1/4 - 1/2 teaspoon)
- 1- 16 -18 ounce container nonfat Greek yogurt (I love Fage)

Step 1
Take cucumber after grating, place in colander and liberally salt. Leave alone for about 1-2 hours to remove excess water from cucumber.
Combine all ingredients in nonmetal bowl until well blended.
Tastes better if allowed to sit overnight for flavors to blend
Note:
Can be served with stuffed grape leaves, gyros, as toppings for meat dishes or as a vegetable dip.
