Ingredients
- 1 (15oz) can boneless skinless salmon, drained & flaked
- 2 lg. eggs, lightly beaten
- 1 TBL chopped fresh dill
- 1 1/2 tsp Old Bay seasoning
- 1 C fresh bread crumbs (abt 2 white bread slices)
- 2/3 C finely crushed small buttery crackers, (club Minis)
- 1/4 C canola oil
- 1/2 C mayo
- 1/2 C sour cream
- 1 1/2 TBL spicy brown mustard
- Garnish: chopped fresh dill
- lemon wedges

Preparation
Step 1
in med bowl, combine salmon, eggs, dill & seasoning
stir in bread crumbs
let stand 5 min
in shallow bowl, place cracker crumbs,
using hands dipped in water, shape salmon mixture into 8 patties
lightly dredge patties in cracker crumbs
in lg. nonstick skillet, heat oil over med. heat
add patties & cook 2-3 min on each side or until golden brown
in sm. bowl, combine mayo, sour cream & mustard
serve w/ salmon cakes
garnish w/ fresh dill & lemon wedges
