Onion Crunch Potatoes

Italian seasoning is a savory dried herb blend. For home-made, combine 1/2 teaspoon dried oregano and 1/4 teaspoon each of dried basil and rosemary.

- 4 large russet potatoes, scrubbed and cut into 1/4 inch thick slices.
- 1 Tablespoon margarine, melted
- 2 cloves garlic, minced
- 1 teaspoon black pepper
- 1 teaspoon thyme
- 1/2 teaspoon salt
- 2 large eggs
- 1/4 cup skim milk
- 1 cup bread crumbs
- 1 teaspoon dried Italian seasoning
- 1 large yellow onion, cut into 1/4 inch thick rings.

Prepare oven to 450 degrees. Arrange potatoes, overlapping slightly, ina 13x9 inch baking dish. Brush margarine over potatoes. Sprinkle potatoes with garlic, pepper, thyme an salt. In a small shallow bowl, whisk together eggs and milk until foamy.
On a sheet of waxed paper, combine bread crumbs and Italian seasoning. Mix well. Dip onion rings into egg mixture, allowing excess to drip back into bowl. Dredge onion rings in bread crumb mixture, patting so crumbs adhere. Arrange onion rings in a single layer over potatoes.
Bake the casserole, turning the onion rings once, until potatoes are cooked through and onion rings are crisp and golden brown, about 30-35 minutes.
