Today, I will share an easy recipe that is both sweet and good for you...Apple Crisp Baked Apples. Cored, then loaded with a brown sugar, oat, and pecan stuffing - the same combination I used on my Apple Crisp - these sweet treats are really good.

Ingredients

  • 3 - 4 red apples - (we are not sure what variety is produced by our tree, which are in this particular version!)
  • 4 T. butter
  • 1/3 cup firmly packed Splenda brown sugar (or reg. brown sugar)
  • 1/3 cup chopped pecans or walnuts
  • 1/3 cup oats
  • 1/4 t. cinnamon, optional
  • 1/4 t. nutmeg, optional
  • 2 cups apple cider, optional (otherwise, use water)

Preparation

Step 1

Wash and core the apples, leaving a bottom so the oat stuffing and juices don't run out. Cut off the top to flatten, then hollow out the core to remove the seeds and to create a cavity for the oat stuffing.
In a small bowl, mix the oats, brown sugar and pecans. If you want to spice it up, add the cinnamon and nutmeg now.
Fill the apples with the oat stuffing; it will cook down, so
pack it in as much as you can.

Crisp Mix
Place the apples in an 8x8 baking dish and pour the apple cider or water in the pan around the apples. Cover tightly with foil and bake for 30-45 minutes. *Bake time is subject to the size of the apples and the nuances of your oven.
Apples should be easily pierced with a fork or knife

when done (as you can see from my pictures, one of the apples split open...a good sign it is done)
Allow to cool for 5-10 minutes.
For some added goodness, serve with a scoop of vanilla ice cream, caramel topping, or whipped topping.
