Italien dressings for house or side salads
Made both with balsamic and red wine vinegars

Ingredients
- For a side salad -
- 4 oz - balsamic vinaigrette
- 4 oz - Extra virgin olive oil
- For a chefs salad -
- 4 oz - Red wine vinegar
- 4 0z - std Olive oil (not light weight for frying, med weight for sautéing )
- Spices -
- Oregano
- Garlic powder
- sugar
- salt
- freshly ground pepper
- crushed red pepper (optional - to taste)

Preparation
Step 1
In a sealable container, add in the oil and vinegar.
Then add in oregano (3-4 shakes), Garlic powder (1 light shake, or to taste), a small amount of salt, several grinds of fresh ground pepper, and 1-2 shakes of crushed red pepper (if desired).
Add in 1 teaspoon of sugar. Shake very well until the sugar is completely dissolved.
Due to differences in vinegars and oils, sample the dressing to see if either more sugar, or more vinegar is needed. The dressing should just be very slightly sweet, still with a good tang from the vinegar.
The red wine variant is sharper which works well with the meats for a chef salad. The other is more complex, making it good for a side salad.
